New Recipes ~

So, no pics today~ sorry Nana! ;) We spent the day in the yard and then at the Dr. Jackson started complaining last night with his ear and so I took him in today and of course it is infected! So ~ he started a 10 day round of meds! Fun times! I have tried some new recipes this week and wanted to share them. They were all easy and good ~ 2 requirements for me while cooking! Enjoy! Tamale Cakes ~ similar to the ones from The Chop House Step one ~ Saute' 1 can whole kernel corn in a little butter and red pepper flakes until brown. I added curry powder too. Step two~ 1 pckg Jiffy corn bread mix 1/2 pckg Martha White corn bread mix 3/4-1 cup water Mix until blended ~ you don't want it too runny ~ I had to "play" with it until it looked right. Add the corn to this mixture. Step Three ~ Cook on a griddle until done, flipping once ~ these will look like pancakes Step four ~ Top with chipotle salad dressing ~ I made spicy ranch and used that. After the dressing top with purple onion, avocado, tomato and fresh cilantro that have all been chopped finely ~ Enjoy!! **I served this with yellow rice and it was plenty for a meal! Taco Ring ~ Take 2 cans of crescents rolls and fold them into a star shape onto a round pizza pan. Brown hamburger meat ~ add taco seasoning (like you are making tacos). Fill the inside part of the ring with the meat, fold the "tip" part over to create one big ring. (this is similar to the chicken club brunch ring for pampered chef). Top with shredded cheese and bake. Serve with green onions, tomato, black olives, lettuce and sour cream ~ EASY and all 4 of us like it! Apple Pie~ spray 9x13 pan with Pam. Press in 1 can of crescent rolls. Mix 1 c. sugar with 8 oz cream cheese. Spread on rolls. Top with 2 cans of apple pie filling. Sprinkle sugar and cinnamon on apples if desired. Top with another can of crescent rolls and brush with melted butter. Bake until brown ~ took about 30-40 mins. While cooling ~ mix 1 tsp vanilla, 1 cup powered sugar and water to make icing. Spoon this over pie. Yummy!!!
